Recipe of the Week - Cherry Quattro Protein Pancake

Ingredients:

  • 75 mL pumpkin puree

  • 75 mL Greek Yogurt (2%)

  • 100 mL egg whites (Liquid Muscle-Strawberry flavour)

  • a dash of vanilla extract

  • 30 g oat flour

  • 10 g coconut flour

  • 1/2 tsp Baking Powder

  • A squirt of lemon juice

  • Vanilla Quattro Protein Powder

  • Liquid Stevia

Toppings:

  • Banana

  • No sugar added Cherry Pie Filling (E.D Smith’s Light and Fruity)

  • 1 Fresh Cherry

  • Maraschino Cherries

  • Light Whipped Cream (optional)

  • Graham Cracker crumbs (optional)

 

 

 

Instructions:

  1. Mix wet ingredients and stir in dry ingredients

  2. Cook on a got greased pan or griddle at 375 degrees Fahrenheit for about 3-4 minutes, then flip and cook for another 1-2 minutes until done

  3. For the vanilla “icing” or “protein fluff”, mix 1 scoop of Vanilla Quattro with 80-100g greek yogurt and a couple of drops of stevia

  4. Layer each pancake with the vanilla icing concoction and banana slices, top with cherry pie filling, whipped cream and whatever else you’d like
